looking for offroad exhaust ideas. I was thinking a Y pipe into a double intake ported muffler with 1 port out, then just dump the exhaust out to the side. The least amount of exhaust piping that will not interfere with my engine performance is all that is desired

I would run dual pipe all the way out the back. Just because your running a SUV platform and if you are thinking about doing any winter wheeling, it's a good idea to keep the exhaust out of the cab. So I don't recommend just dumping the exhaust anywhere under the tub.

what about a Y to a muffler and one exhaust exit port that is a tad larger than the two input ports?

That could work but to keep it cheap I would think maybe an "H" pipe and dual outputs
Are you wanting to run open exhaust or did you want to muffle it?

I would like to muffle it. Ive grown out of being obnoxious with the things I own when I am plenty on my own !
